Pan Seared Scallops with Bacon Cream Sauce

Ingredients:

• 6 slices bacon, chopped
• 1/2 Tbsp butter
• 1 cup heavy cream
• 1/2 cup Parmesan, freshly grated
• 1/2 tsp olive oil
• 6 large scallops

Instructions

• in an exceedingly medium pan, cook sliced bacon over medium-high heat till crisp. take away the bacon with a slotted spoon to a paper towel-lined plate to empty.

• Add butter, cream, and Parmesan to the pan with the bacon grease. cut back the sauce over medium heat by 0.5. Stir within the roast bacon. Season with salt and pepper to style. Keep heat over low heat.

• in an exceedingly separate pan, heat 1/2 tsp oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot (make certain it's very hot!), add the scallops to the pan. Sear till golden brown on one facet, more or less one minute, and switch over. Sear on the opposite facet for one minute till golden brown. take away to a paper towel-lined plate to empty.

• Serve the scallops over a layer of bacon white sauce. Garnish with chives.
